In my headcanon, Rarity is the oldest of the girls and second tallest, married to Applejack. A beautiful and mature young woman who loves to spoil her friends.
Her clothes now are more elegant and modest, covering her more with expensive fabrics, covered in pearls and diamonds of course. I kept her makeup purple because I could just not make the blue work as eyeshadow.
I'm not entirely sure about where she could be from, but I'm thinking she could be French!
