I like to imagine pegasi as being more 'energetic', unicorns as being more, erm, 'easily stimulated', and earth ponies as being 'calmer but more stubborn'. This point is only relevant to me, but this factors into what races I made my ponifications. Other species of creatures or ponies are a case per case basis.
