Now, before you murder me…! Think about it: Rarity isn't stupid. We've seen hints that she knows Spike likes her. If she liked him back in the same way, they'd be together, right? I think I know why and even though it's apparently a controversial thing to say here, I'm sayin' it. It's because Spike is… a dragon. By all indications, Rarity doesn't care for dragons and has a sort of "oh, he's one of the good ones" view on Spike.
