A theory I've been thinking about lately, is that Twilight enchanted the crystal heart and ordered cadence and flurry to shatter it and bury the pieces everywhere to keep its magic of love alive in ponies, and also to keep it away from power hungry villains, by consequence, crystal ponies lost their shining coats with time. the crystals in the lands of Bridlewood and other places grew from those fragments, as the generations went..
