Minty Bubblegum quickly rose up as my fav background pony.
She's got such a fun design, she's had a few lines in the show, and i love her design overall.

I have a personal headcanon that she does rounds of Ponyville, with baskets of home-made candy and sells them around the town,
often stopping off at the market square where she has her own tent set up.
Her business is fairly successful, because of the fact she makes effort of walking around the town and letting ponies catch her as she's doing her rounds,
instead of sitting in her market tent, waiting for ponies to come to her.

She's a very fun character to draw and having her sell candy to Derpy and Pinkie seemed like a lot of fun.
With Pinkie being a regular customer, or even a partner who Pinkie hires often to cater parties with her sweet treats.
